Can anyone please tell, how does windows operating system find a particular file's default opening program, for example Notepad is a default application used for opening files having extension txt. Does it read registry or something else?

Yes. Search for OpenWith

It's a folder that has all the associated filetype keys. You can right click on any filename and adjust the settings.
