Windows has incorporated into it logoff scripts. You can write whatever scripting you want in there such as saving date and time to a file.
or...

If you have XP Professional it is really easy.

I am still researching how to do it with XP Home. If worst comes to worse, can't you just have a program that writes to a file every minute so in theory when you log off the last time entered will be the log off time? You will just have to work with filenames so you don't overwrite one.
